Yes and Yes.

I absolutely love tarts. Savory or sweet. Tarts are like crepes to me. Light but filling and you can make a ton of variations.

Since we are in October I wanted to share making a savory tart with you! This recipe is based on one I found from Recipe Fiction.

First I want to say I like cooking and baking but honestly if I can cut a corner somewhere I will. Maybe one day I will make dough from scratch but today is NOT the day. So Voilá! Puff pastry to the rescue!

First the ingredients you will need are:

2 Puff Pastry Sheets – defrosted and laid out on a cookie sheet so they are soft

1 large onion – sliced thin

3 shallots – sliced thin

2 Tsp Walnut Oil

2 Tbsp Balsamic Vinegar

Sprigs of fresh rosemary

Arugula for garnish

2 medium Potatoes thinly sliced – insert into the microwave for about 3 minutes

1 5 oz. Blue Cheese package

1 egg

1/4 cup heavy whipping cream

Ready? Here we go!

First preheat your oven to 400 degrees

Next get a nice non stick skillet and put in your 2 Tsp walnut oil and your 2 Tbsp balsamic vinegar warm over low heat

Add your sliced onions and shallots to caramelize them. Remember to periodically stir them.

Once they are caramelized take them off the heat to cool down

In a medium mixing bowl add your onions, heaving whipping cream, rosemary, egg and half of the package of blue cheese crumbles and mix well

Then pour your mixture over your prepared puff pastry

Top with your potato slices and use the remaining blue cheese crumbles over them

Crimp your puff pastry over the mixture and potatoes and put into the oven

Bake 40 minutes or until the potatoes are a golden brown. Add arugula topping. It is just that easy! Enjoy!
