Green Chile Stew

Goodness.

Fall is my favorite time of the year and as soon as it comes around I find that I instantly want to make comforting food. Since I am from New Mexico I find that my instincts always lead me back that way and the recipes I make.

This is a great stew that everyone loves. It’s warm, hearty and has a little kick! Perfect for one of those nights where you want to stay in and watch movies. Super easy and great when you don’t have a lot of time.

I hope you enjoy this as much as I do!

For the ingredients you will need:

2 lbs organic hamburger meat
(I always say if you are going to eat meat buy free range and grass feed. What you put into your body is important.)

1 and 1/2 onion – chopped

32 oz. organic Beef Broth

1 1/2 cup water

6 potatoes – cubed

1 cup Hatch green chile
(If you can’t find the Hatch kind I would recommend finding some frozen chopped green chile or sometimes they sell it in cans. Fresh chopped could work but would add on some extra time.)

chilistew-22 14 oz. can of petite diced tomatoes

2 teaspoons of garlic salt

1 teaspoon salt

1 teaspoon black pepper

1 tablespoons olive oil

Ok are you ready!

First you want to brown your hamburger meat over medium heat with the olive oil

Add your onion

Season with the garlic salt

Stir together and let cook for about a minute

Next add the beef broth and the 1 1/2 cup water

Add your cubed potatoes and turn down to simmer for 15 minutes

After 15 minutes have passed add in your chile and add the tomatoes

Season with salt and pepper and let cook on simmer for an hour and a half until the potatoes are done

Serve up and eat!

**Side note: for extra garnishment you can add a dollop of sour cream and pepper jack cheese shreds on top DELICIOUS!
