Beef Roast with New Potatoes and Shallots

Sometimes I want to cook a roast and don’t want to spend the whole day on it. So when I don’t want to put it into the slow cooker I usually go with a very simple prep and oven cook. Sometimes simpler is better. This is based on a Martha Stewart recipe.

First you will need 1 1/2 pounds new potatoes, rinsed, and cut in half. 1 pound shallots, ends cut, peeled and halved lengthwise. Olive oil, salt and pepper. 1 beef roast of your choosing.


Preheat your oven to 400 degrees. While this is heating mix all your potatoes and shallots in olive oil in a roasting pan. Enough to coat them but not drench them. Then salt and pepper.

Push all veggies to the side and put in your roast. Coat your roast in olive oil and salt and pepper it. I like to add some sliced serrano peppers from our garden just to give it a little spice.

Next tie your roast up.


Put the whole thing in the oven and cook for about 40 min. or until the meat thermometer reads 130 degrees in the center of the roast. Don’t forget to toss your vegetables once in a while when the roast is cooking. This will give them a nice roasting all over.


Once it is cooked let your meat rest for about 10 min. I usually just cover the whole roasting pan with tin foil so it stays warm.


Next slice it up and plate!
